A Colorado native trained in Michelin-level kitchens, Justin Fulton brings refined technique and wild-foraged ingredients back to the mountains through an intimate, tasting-driven approach.

Chef Justin Fulton, raised in Keystone, Colorado, began his culinary career at just 14 years old at the Edgewater Café on Keystone Lake. Deeply connected to the landscape where he grew up, he continues to draw inspiration from the mountains, often foraging ingredients such as spruce tips and wild chamomile to incorporate into his cooking.

After high school, Fulton moved to the East Coast to attend culinary school in North Carolina, where he developed a strong foundation in classical technique. He went on to train in some of the country’s most respected kitchens, including The Fearrington House in North Carolina, Natalie’s at the Camden Harbour Inn in Maine, and Daniel in New York City, refining his approach to precision, seasonality, and elevated dining.

In 2020, Fulton returned to Colorado, bringing his experience full circle. In 2022, he launched Margot in Denver, a contemporary tasting menu restaurant that reflects both his fine dining background and his deep connection to the natural environment.

At Margot, Fulton delivers a refined, ingredient-driven experience rooted in technique and a strong sense of place. His cooking balances precision with restraint, highlighting seasonal ingredients while maintaining a clear, thoughtful point of view shaped by both his training and his Colorado roots.
