Sheila Lucero brings a refined, ingredient-driven approach to her cooking, balancing technique with a strong sense of place and seasonality.
Denver native Chef Sheila Lucero is the Culinary Director for Big Red F Restaurant Group, overseeing the kitchens of Jax Fish House & Oyster Bar and Centro Mexican Kitchen. A graduate with honors from the Colorado Institute of Art, Lucero joined the opening team at Jax Fish House in Denver and rose to Chef de Cuisine in 2002, establishing the restaurant as one of Colorado’s most acclaimed seafood destinations.
A longtime advocate for responsible seafood sourcing, Lucero has led Jax’s sustainability efforts for nearly two decades. Under her leadership, Jax became the first restaurant in Colorado certified by the Monterey Bay Aquarium’s Seafood Watch program. She has served on Seafood Watch’s Blue Ribbon Task Force, advocated for ocean policy in Washington, D.C., and is an alum of the James Beard Foundation’s Chefs Boot Camp for Policy and Change.
