Carboy Winery represents a modern vision for Colorado wine, combining estate vineyard investment with an innovative urban winery model. Founded in 2016, Carboy partners with growers throughout Colorado’s Grand Valley AVA while also farming vineyards in Washington’s Horse Heaven Hills AVA, allowing the winery to craft a diverse portfolio that celebrates both regional character and varietal exploration.

Colorado’s high-elevation vineyards provide abundant sunshine, cool evenings, and a long growing season that help preserve natural acidity while developing vibrant fruit flavors and balanced structure. These distinctive growing conditions shape Carboy’s Colorado wines, while carefully selected vineyard sites in Washington expand the winery’s ability to produce additional styles without compromising quality or site expression.

Winemaking is rooted in thoughtful vineyard relationships, careful fruit selection, and an approachable philosophy that connects guests directly with the winemaking process. Through its winery in Palisade and tasting rooms across Colorado, Carboy has helped introduce new audiences to Colorado wine while creating experiences that bridge vineyard, winery, and table.
