At Sign of the Dove, the focus returns to where great wine begins: the vineyard. Built around a philosophy of thoughtful sourcing and small-lot production, the wines reflect a deliberate approach to capturing the character of each site and vintage.

Working in close collaboration with experienced vineyard partners, the winery selects fruit based on balance, structure, and the ability to express place with clarity. Each vineyard brings its own conditions—soil, exposure, and climate—shaping wines that are distinct rather than uniform.

In the cellar, intervention is minimal. Each lot is handled individually, allowing the natural qualities of the fruit to remain central. The goal is not to impose style, but to guide the wine toward balance and precision.
